Meal complete. I made up the recipe to mimic the Plan B recipe the best I could with what I had in the fridge:
- Portobello mushroom caps, soaked in balsamic, EVOO, oregano, s&p
- Red Onion, sliced
- Asparagus, fresh (snap where it breaks naturally to remove the tough ends)
- Spinach, raw
- Tomato, sliced
- Whole grain English muffins, toasted
- Laughing Cow swiss, light
- Pre-marinated garlic & white wine chicken breast, baked and split thin
1. Pre-heat skillet, coat with cooking spray. Add Portobello caps, pour extra balsamic mixture over them. Cook until mushroom are tender and golden and balsamic reduces. Remove mushrooms from pan, add onions to balsamic reduction.
2. Sauté onions in balsamic reduction until caramelized. Add asparagus, sauté until warm to the center but still crisp. Remove from heat.
3. Top English muffin with 1/2 thin sliced chicken breast, Portobello cap, onions, fresh tomatoes, spinach leaves, and fresh ground pepper to taste. Top with laughing cow cheese spread on English muffin top. Enjoy!
